Anybody else hungry? Today, we’ll be chatting about HelloFresh’s Pork Bulgogi Meatballs with Carrots and Zucchini over Rice.
This recipe takes a total of 35 minutes, but I’m pretty sure I made it in less! I love HelloFresh because how easy and fast it is. When you select your meals each week you can see how long the total preparation will take. If I’m expecting a busy week with work, I look for shorter times. They can be as low as 20 minutes!
HelloFresh does Asian food really well. I’ve enjoyed every Asian-inspired dish I’ve received. They’re extremely balanced. Sweet, sour, spicy, and crunchy! Mmm.
With this one containing rice again, I’ll warn you. Make sure you check on your rice before the 15 minutes is up! You don’t want burnt rice on the bottom of your pot. Tip: If you notice that rice is sticking to the bottom, don’t panic, you can always add something like butter, sesame oil, or olive oil to loosen it (and it tastes great!).
My favorite part of this recipe is actually the fresh ginger. When I made anything Asian-inspired at home I never use fresh ginger. Why? I don’t know. Maybe I forget how easy it is to use. You just peel and mince. It’s as easy as garlic. I always thought I wasn’t a ginger fan for so many years, because of the pickled ginger you get with sushi. It tastes a little like soap to me. Anyone else? Thankfully, ginger does not taste that way when fresh!
After you get the rice on and chop up your veggies, this recipe is pretty much smooth sailing. You sauté the zucchini and then the carrots and combined them in a bowl with sesame oil and salt/pepper. Meanwhile, you are rolling your pork meatballs (pork, panko, ginger, scallion whites, and bulgogi sauce.) HelloFresh describes the bulgogi sauce as a savory concoction that combines soy sauce and sesame with a little bit of sweetness. I would say that it’s comparable to a teriyaki sauce, but sweeter. I really enjoy it.
After, you brown the meatballs and then add the rest of the bulgogi sauce until the meatballs are cooked through. After that you just build your bowl with rice, carrots, zucchini, and the meatballs. You then top it with sesame seeds, lime wedges, scallion greens, and sriracha, if you like.
I think my husband’s favorite part is how many meatballs it really makes. I normally take about 6 meatballs (they’re about 1-inch). I think that leaves maybe 10 others. Next time, I’ll count.
Will I order this one again? I think I spoiled this one above when I said “Next time, I’ll count.” This is the second time we ordered this specific meal and I think we’ll definitely be ordering it again in the future.
