So, what are y’all having for dinner tonight? I’ve got another HelloFresh Recipe Review coming your way! Today, we talking about Lemon Butter Barramundi with Pistachio Rice and Chili Roasted Carrots.
I don’t know about you guys, but I love seafood, especially in the summer. It just always feels so fresh and light. HelloFresh really does fish well, so anytime I have a chance to order it, I do! I’ve loved every single salmon and barramundi dish that I’ve tried. And I’ve tried quite a few.
Spoiler alert: This one was no different! I loved it too! Let’s talk about barramundi. Have you ever tried it before? Truthfully, it’s my new favorite fish. Anytime it’s been available, I’ve ordered it. Barramundi is an Asian sea bass. It is a white flakey fish with a very mild buttery flavor, which means it takes on spice really well. It’s also extremely sustainable. Yay!
This recipe takes a total of 35 minutes and is 760 calories. I feel like I cooked it faster than that, which is always a win!
The one con I found about this meal, were the carrots. I was sent some really thin ones, which made it really hard to slice them diagonally for the recipe. I should have just sliced them normal and moved on.
This recipe calls for scallions and you all should know my feelings about onions by now (I’m not a fan), so I just left them out. If you’re ever looking at a HelloFresh recipe and you notice an ingredient you don’t like, you don’t always have to use it. Of course, if you don’t like broccoli and the side dish is broccoli, there isn’t much you can do about that!
So, you get your carrots (be careful with the amount of chili flakes you put on them) in the oven and your rice cooking. Next, you toast the pistachios.
I love pistachios so much! I think I would rename this dish as something like North African Inspired Barramundi, because that’s what it truly is. It might scare away some people, but it’s a very accessible dish. What I would do next time? Probably chop up the pistachios. I think they would add better texture if they were in the rice chopped.
Now, you need to spice up your barramundi. They sent a Tunisian Spice Blend, which is made up of sweet smoked paprika, caraway, garlic powder, coriander, chili powder, turmeric, cinnamon, black pepper, and ground red pepper. See what I mean about North African Inspired? It’s a savory spice blend that has a slight bit of heat. I think it works amazing with the fish!
After you cook the fish for 3-5 minutes per side (be sure that skin is crispy!), you start on the lemon butter sauce. It’s just vegetable stock concentrate, 1 lemon wedge, ¼ cup of water, lemon zest, and 2 tbsp of butter. Season it with salt and pepper. The sauce really brings everything together.
Would I order this recipe again?
Of course I would. Y’all already know I’m a fan of the barramundi. It’s delicious! But, this was a really unique recipe that I really enjoyed. It definitely helped my taste buds branch out!
