Who’s ready for another HelloFresh Review? This week we tried the Guacamole Green Goddess Bowl with Farro, Crispy Chickpeas, and Roasted Sweet Potato.
When ordering HelloFresh, I try to pick a vegetarian meal about every other week. I’ve loved each and every one we’ve ever gotten. The only issue with ordering the vegetarian meals is that you don’t feel that you get the bang for your buck. These dishes if made on your own would cost less than what you pay on HelloFresh: $6.99-$8.99 per meal, but you have the added convenience of 1) No meal planning and 2) No shopping.
The time on this recipe came to 40 minutes and the calorie total at 810. You do get protein in this meal with the chickpeas. Until, I started HelloFresh, I had no idea how much I loved chickpeas. Don’t get me wrong, I definitely know I love hummus, but I had never tried chickpeas on their own. Most of the recipes have called for them to be roasted. Roasting the chickpeas gives them a crunchy element.
In this recipe you roast the sweet potato and chickpeas on the same pan but separate them. You add olive oil, salt, and pepper to both sides. The chickpeas get the “fry seasoning” as well, which is just onion powder, garlic powder, and paprika. Honestly, I wouldn’t mind putting it on the sweet potatoes as well. I think they were just looking for different flavors throughout this dish.
I think this is the first time I tried farro too. Farro is grain that has been found in Egypt amongst the tombs of kings and is said to have fed the Roman Army. Well if it’s good enough for Egyptian kings and the Roman Army, it’s good enough for me. In all seriousness, I loved the farro. It tastes like a “meatier” rice. It’s filling like quinoa. I would definitely cook with it again.
Tip: I had trouble with reducing the liquid in the farro. It’s supposed to cook off like rice, but mine never did. I had to strain it. I would use a drop less liquid next time.
Now, the absolute STAR of this dish is the green goddess dressing. You add the pre-made guacamole (which is delicious), sour cream, chives, olive oil, water, lemon juice, salt, and pepper. This dressing was so good, I saved some for a salad for lunch! You add the dressing to the arugula, but you still have some left over to put on top of your bowl.
After that, all you do is build your bowl. Farro on bottom, chickpeas, sweet potatoes, and arugula on top. Then finish it with some of the delectable green goddess dressing. Boom, you’re done. The only reason this recipe takes 40 minutes is because the farro takes about 30 minutes to cook. I got so much done while waiting on the veggies to roast and the farro to cook.
Will I order it again? Definitely! This was so filling and definitely surprised me how flavorful it was. I might even make it myself next week.
