Now, this one is kind of cheating. We definitely make these more than just during football season, but they’re great for tailgating! Easy and delicious! This recipe will make 6-10 tacos depending on how you plate them. I typically use two shrimp on mine and three on my husbands.
- ½ lb of peeled and deveined shrimp
- 1 can of white shoepeg corn
- 1 jalapeno
- 2 garlic cloves
- 2 avocados
- 10 corn tortillas
- 1 tbsp Garlic Powder
- 1 tsp Paprika
- 1 tsp Chili Powder
- 1 tsp Cumin
- Salt & pepper
First, I prep the jalapeno by removing the seeds and ribs from the inside and dice it up. You can leave more of the seeds and ribs if you prefer your tacos to be on the spicy side. Tip: Use kitchen-prep gloves when handling peppers like jalapenos. It ensures you don’t wipe your eye later and end up in burning pain. Not that I know from experience or anything.
Next, slice your avocado and place it in a bowl. Mash avocado and season with salt, pepper, and garlic powder to taste. You can add in tomatoes and onions if you like, but I keep it simple.
After that I chop up my garlic and put a medium frying pan on medium high. Drizzle some olive oil and wait for the pan to heat up. Once heated, toss in garlic and jalapenos. Cook until softened 3-4 minutes. Careful. Don’t burn the garlic.
While the jalapeno and garlic cooks, drain your corn. Next, you’ll combine the garlic powder, paprika, chili powder, and cumin in a small bowl. Add salt and pepper to taste. Sprinkle spice rub on the shrimp and toss to coat.
When the jalapeno and garlic is done, add in the corn. Cook for another 3-4 minutes. Next, you’ll heat a large frying pan to medium high and toss in some olive oil. Then place your shrimp in the pan. Once your shrimp have turned pink (about 1-2 minutes) flip and cook for another 1-2 minutes.
While the shrimp are cooking, place your tortillas in a damp paper towel and microwave a few seconds to warm them. Or you can place them on a griddle for a few seconds.
Finally, layer your tortilla with guacamole, corn & jalapeno mix, and 2-3 shrimp. Top it with your favorite salsa!
